Steven likes to buy local. Most of the food that goes into creating his dishes is sourced from Suffolk, some a little further away in Kent and Norfolk, from great suppliers Steven knows and trusts. Buying local is a great way of supporting local businesses, too.
We love working with great suppliers to find the best products to serve in our pub. We look for quality, honesty, consistency and great service from all our suppliers, just like our guests do.
We source the fantastic lamb, venison and game on Steven’s menus from the famous Denham Estate, an agricultural estate occupying 1200 acres of picturesque Suffolk countryside between Newmarket and Bury St Edmunds.
The estate has one of the largest herds of Fallow deer in Europe and is acknowledged as a leading example of deer farming undertaken in keeping with the foremost principles of animal welfare and good husbandry. Apart from Fallow deer the estate carries a large flock of rare breed sheep, the Denham Castle Lamb, unique to the estate, which Steven also loves to cook with.
